INGREDIENTS
- rice 2 cup
- kidney beans 1 cup
- tomatoes, very ripe 2
- medium white onion 2
- medium jalapenos 3
- cup canola oil 1/2 cup
- minced garlic cloves 4
- Potatoes 2
- Tofu1/2 cup diced
- Mashrooms 1/2 cup diced
- tomato paste 2 tbs
- salt
- lime 1
DIRECTIONS
Process tomato and onion in
processor or blender until pureed
and thoroughly smooth.
Boil potatoes in 4 cups of vegetable stock.
When potatoes are soft, remove from
heat and let cool down
In a pan sauté chopped onion
and 2 cups brown rice until
onions are soft and rice is toasted.
Add some crushed garlic and sauté a
little with rice . add tomato puree
tomato paste and boiled kidney beans.
and bring to a boil, reduce heat,
cover and simmer until rice is done.
add some frozen vegetables and
add jalapeños and lemon juice
